Ensaladang Talong or Eggplant Salad is a Filipino style salad made of grilled eggplant. It is a common side dish paired with fried or roasted meat or fish. Its sweet-sour taste balances the oily-salty taste of fried meat.
It's easy to prepare too!
WHAT WE NEED
Eggplant
Onion
Tomatoes
Vinegar
Red Bell Pepper
Salt
Ginger
PREPARATION
💡Before roasting the eggplants, pierce it with fork or knife. This will prevent the Eggplant from exploding. Since eggplant contains 92% water, it will burst into pieces when steam builds up when it is heated.
Ways to Roast Eggplant:
- By roasting over coal
- By roasting directly above stove flame
- By broiling inside the oven
- By using electric grill
- By using wok above a stove flame
Just choose what is the most convenient for you. 😄
Step 1
Peel the roasted eggplants. Make sure to cool it a little or you will burn your fingers! 😅🖐️
Step 2
After peeling, remove the stem. Cut the eggplant in your desired length.
Step 3
In a serving dish, place the roasted eggplant, onions, tomatoes, ginger, bell pepper.
Add vinegar and salt to taste. Mix.
You can add a bit of sugar and chilli should you want it sweet and spicy. Others add fresh coconut milk to make it creamy!
