This is one of the healthiest and tasteful desserts I have in my radar.
As a basis it comprises of macadamia nuts, coconut oil, cacao powder (bio) and whichever, nut, or dried fruit, or liquor, or even coffee you wish to add. As I received a gift with macadamia nuts, I thought that the best way to have them is by creating this salami. The macadamia nuts I received were salted, so I rinsed them in plain water 4-5 times, and they were ready to cook.
Ingredients: 300gr grated macadamia nuts (as I said before, I rinsed and then strained them), 200gr coconut oil (in the form of butter – you can also heat it up and use it in liquid form, but I found it more easy to work with if it is in the form of butter), 200gr grated dates (needless to say without the core), 1 cup of bio cocoa powder (which I sifted first), 1 tbsp of cocoa butter (grated as mine was firm), 1 shot of French coffee, 1 shot of almond liquor (you can use whichever liquor you have, or even none at all), 1 & ½ orange juice (liquids are like communicating vessels: if you don’t use liquor you will have to increase orange juice or coffee accordingly), 1 orange zest, 1 cup of thickly grated almonds and cashews, a handful of raisins, 1 tsp of hippophae dried seeds (myth says that Alexander the Great’s horses used to eat these seeds and became very strong! Hippo means horse and phae is short for eating, in Greek), 3 figs finely chopped, 1 tbsp of goji berries, a handful of dried cranberries with no sugar, 1 tsp of linseed, 1 tsp of chia seeds, a pinch of vanilla powder
The nuts I used are the ones I prefer and have handy. You can use whichever nuts or dried fruits you have at home. You can melt chocolate and add some (black, milk or white, whatever your preference is), you can add butter biscuits instead of fruits, you can add more coffee or no coffee and just orange juice (or whichever juice you prefer – clementines are interesting..).
Mix all your ingredients in a deep bowl; use your hands to have a uniform result. The result should look like below top right image:
If the result is too juicy, put the mixture in the fridge for an hour. If it is too firm, you can add orange juice or coconut oil.
Place in salami form in greased proof paper and then in plastic film and store in the refrigerator.
Depending on your preferences, you can store it in the fridge or the refrigerator, take out and slice 5’ before serving.
