As an Indonesian, I fall into the category of people who really like spicy food. Indonesian food types always tend to be spicy and salty, although in certain areas, there are types of food that taste a bit sweet.
In addition to warming the body, eating with chili sauce certainly makes your appetite higher. Especially for cold weather like now, wow.. it's definitely fitting to eat spicy food.
These few days, our family members are enjoying seafood, I happen to still have some dried squid in the fridge, so I'm planning to make chili squid that will last for a few days.
Because this dried squid is processed by salting, then, when it will be cooked, the squid must be soaked in hot water first, so that the salt content contained in this dried squid is somewhat reduced.
So, let's go directly to the recipe for making dried squid chili.
- 250 gr dried squid
- 6 cloves of red onion
- 4 cloves garlic
- 10 pieces of red chili
- 5 green chilies
- 2 bay leaves
- 3 lime leaves
- 1 lemongrass stalk
- galangal
- ginger
- vegetable oil for frying
- salt
- pepper powder
- sugar
- spatula
- pan
- as usual, make sure all the materials and tools that will be used have been thoroughly washed
- Soak the dried squid in hot water for about ten minutes. After that, drain and fry briefly denngan medium heat.
- Puree the red onion, garlic, cayenne pepper, and red chili, also green chili
- heat the oil, stir-fry the mashed spices, then add galangal, ginger, bay leaf, lemongrass, and lime leaves, stir-fry the spices until fragrant,
- Enter the squid that has been fried into the seasoning. Add a little water.
- add salt, sugar, and ground pepper
- Stir until all ingredients are well mixed, don't forget to taste to make sure the taste is right.
- for your information, because the squid is still a bit salty, it's best not to use a lot of salt when cooking,
- cook until the squid is chewy and tender, after it's done, remove and serve!
Actually, many also mix this dried squid with petai, it's also very tasty and one of my favorites too. But, because yesterday I didn't find any petai when I went to the market, so I only cooked squid. squid sambal
