A very good and easy to prepare first course based on fish, which mixes well the taste of the sea with that of the earth.
First we have to clean the aubergines and cut them into pieces, we fry them in a non-stick pan.
with extra virgin olive oil and when they are well browned we remove them and let them dry from the oil on an absorbent paper keeping them aside.
We clean the swordfish, remove the skin, cut it into chunks and brown it in a pan with extra virgin olive oil, garlic and chilli, blend with half a glass of white wine, then add some cherry tomatoes cut into small pieces and a little mint (a those who don't like it can use basil).
in the meantime we boil the pasta in salted water and pour it halfway through cooking, keeping a little of the cooking water.
Add the aubergines to the pan, pour the pasta into it and mix it well using the cooking water, stirring well so as to release the starch.
