Recipe to cook a delicious hot pot of sea crabs, full of Vietnamese flavor

Did you know, hot pot is one of the indispensable dishes of family or friends gatherings or happy days, almost hotpot is present at most parties in Vietnam. Hot pot is available from high-class restaurants, roadside shops... Especially on rainy days, my family often chooses hot pot as the main dish that evening. I don't understand why everyone seems to be like that, since I was a kid, my family has had that habit, and it drags me along to this day. That dish is like an indispensable dish on rainy days, suddenly it rains for a long time, the craving for hot pot comes again. Haha..!!!
So today I would like to share my family and my family's favorite hot pot recipe with you.

Preparation materials:

6 crabs
1kg pork bone
100g tamarind
Green pepper, red onion, chili, ginger
Pineapple: half a fruit
Tomatoes: 2
Mushrooms: is there any kind that uses that, but I use chicken thighs and enoki mushrooms
Noodles or noodles with hot pot (in Vietnam we often eat with hot pot)
Spices: Salt, pepper, lemon, sugar, fish sauce, chili (if you eat spicily).
Vegetables to eat hot pot: Ganoderma lucidum, enoki mushrooms, abalone mushrooms, morning glory, spinach, ...

Details of steps to cook spicy crab hotpot:

Step 1: Carry out preliminary processing and cleaning of crabs:

– When preparing crabs, for the dish to achieve a delicious taste, you need to pay attention to choose fresh crabs. Some experience when choosing crabs is to choose those that can still be moved, fresh crabs, lots of meat, probably will have a tight body if there is no possibility that the crab will die. After choosing to buy crabs, start cleaning by scrubbing off the soil that still clings to the crabs with a brush, washing them, removing the shells and bibs, cutting them in half, and draining. I usually use a sharp knife, stab the middle part at the crab's back, cut them in half, then rinse them with water.

– Shrimp: Cut off the antennae, legs, wash, and leave whole.

– Pineapple, tomato: wash, cut into small pieces.

Mushrooms: cut the root and wash with clean saltwater.

– Lemongrass: cut into pieces, smashed. (It's okay if you don't have it)

  • Vegetables to eat: wash many times to clean and then drain.

– Tamarind: put in a cup with warm water, get the juice, remove the seed and shell. (The fastest tip is to put it in the microwave and cook for 1 minute at 800 degrees.)

Pork bones: Buy and wash, blanch in boiling water, then rinse with cold water. Then, put the bones into the pot to boil as the main water of the hot pot, which is the secret to making the hot pot sweet, delicious, and fatty. Note that you should stew the bones for about 30 minutes before creating sweetness for the hot pot, then add spices later.

Step 2:
Next, you put the pot on the stove, add cooking oil, wait until the oil is hot, then add the garlic to saute, add lemongrass, sliced ginger, green pepper, pineapple, and then add the broth to boil. Then, add tamarind juice and season with sugar, fish sauce, and salt to suit your taste.
