The Famous Afang Soup Recipe 🤤

Afang soup is a very delicious soup that originates from the beautiful Efik(Calabar)and Ibibio (Akwa Ibom) people of Nigeria.The Efik and Ibibio people are known for their mouth watery dishes and Afang soup is one of them.
This soup attends occasions with Kings and queens😅.It is rare and quite abnormal for Afang soup to be absent in occasions.It is prepared and served at very important occasions such as: marriages,Dedications,burials etc.Believe me,it is quite mouth watering.

HOW NUTRITIOUS IS AFANG SOUP?

The “Afang leaf" Gnetum africanum has also been referred to as a form of “wild spinach" in English.
The Afang leaf is said to have high dietary fibre,which helps to reduce constipation and weight loss.It is particularly rich in Folic acid and vitamin A,helps to increase blood flow to the sexual organs,help boost sexual desire and ovulation in females e.t.c.Surprising right?🤣
When the Afang leaf with all it nutitional value is prepared with other ingredients needed for the soup,it can be said to make almost a balanced diet.With any swallow of your choice(source of carbohydrate)...it is balanced 😋.

With this,the Afang soup can be and is considered NUTRITIOUS.

INGREDIENTS AND STEPS TO PREPARE AFANG SOUP

INGREDIENTS:

1.The Afang leaf also known as Okazi leaf.

The afang leaf climbs on trees and that is exactly what it looks like.

2.Water leaf

That is a bed of Waterleaf,fresh from the farm.

3.Protein source:could be beef,cow stripe,goat meat or ram.Stock fish,cow skin(kpomo),dry or fresh fish,crayfish etc.

N/B: it mustn't be all the protein source,get what you can easily lay your hands on.
4.Red oil

5.Perewinkle
6.Seasoning cubes
7.Salt
8.Pepper

STEPS:

1.wash,dry,slice and pound(grind) the Afang leaf.

Those are the sliced Afang leaves.

This is what the Afang leaves looks like after grinding.

2.pick(remove hard stems and flowers),wash and cut the water leaf.

Here,the Waterleaf was picked and washed properly till it was clean.

👆The Waterleaf was sliced into tiny pieces.

3.Add onion, seasoning cubes,salt and pepper to your choice of protein source and allow to cook till it's tender

4.Cut perewinkle and wash them very well with warm water and salt until it's clean.

5.Add water in a pot(depending on the quantity of the Afang leaf)and put in on the heat source.
6.Add the stock to the boiling water,taste for seasoning and add if necessary.
7.Add the sliced Waterleaf to the pot,stir,cover the pot and allow to boil.
8.Add perewinkle and grind crayfish.
9.Add red oil enough to colour the soup.
10.Add the blended Afang leaf to the soup and stir thoroughly to mix.
11.Bring down the pot of soup immediately and get ready to serve the delicious Afang soup 🤤.
The Delicious and nutritious Afang soup can be served with Fufu,Garri,pounded yam,Semo or any swallow of choice.
