Ingredients:
1 tsp Ground Flaxseed
2 tsp Water
2 tbs Vegan Butter melted
3 tbs Brown Sugar
1/8 tsp Salt
1/4 tsp Vanilla Extract
1/8 tsp Baking Soda
1/3 cup All-Purpose Flour
1/4 Cup Vegan Chocolate Chips
Instructions:
Preheat oven to 350 degrees.
Make a Flaxseed egg by combining the ground flaxseed and water. Let sit for 5 minutes.
After 5 minutes, combine melted vegan butter, add brown sugar, salt, flaxseed egg, vanilla, and baking soda. Stir with a spoon until well combined, about 20 – 30 seconds.
Add in the flour and mix until the dough is no longer sticking to the bowl.
Fold in the chocolate chips, keeping a few to top the cookie after it's been added to the sheet tray.
Shape dough into a cookie shape on a parchment paper-lined baking sheet. Use the remaining few chocolate chips to the top of the cookie.
Bake in preheated oven 12 – 14 minutes, until cookie is golden.
Serve warm or allow to cool on a wire rack then store in an airtight container.
