Egusi (Melon) and Elejede (Squash) Soup - Africa recipe with Semovita || Heath Benefits of Elejede (Squash)

Hello and Happy new month to y'all

Today I'll love to share a unique Africa recipe of Egusi and Elejede soup recipe which is common to the Yoruba tribal people of the western part of Nigeria.

Although I'm more of a baker than a cook, but on getting home some days ago, I was given a note by my young nephew which state that everyone went out for a program and won't be coming back until later in the night, so I should help out with some meal.

This lead me into sorting for several fresh pepper and onoins vegetables from the garden, because I love eating fresh meal, I then pill some Melon and grinding it alongside the pepper on the grinding stone(an ancient process of grinding). The Squash use as been cut into smaller pieces and sun dry, well preserve for future use, in days like this.

So the following are the ingredients and the process of making this soup.

INGREDIENTS

  • Egusi (Melon)
  • Elejede (Dry squash)
  • iru (Locus beans)
  • Crayfish
  • Onions
  • Seasoning
  • Salt
  • Fish
  • palm oil...

PROCESS

  • per boil your fish any other beef you wish to use and add some seasoning, but make sure not to pour away the water.

  • pour your palm oil into the pot and let it heat, then add your slides onoins, locus beans,blender pepper, Cray fish and Dry squash into the stem oil. The. Cover it all let it steam for some minutes.

  • add your boiled fish water sauce, Crayfish and let it boil for some minutes.

  • add your some water to your blended melon and mix it together, then gradually pour into your sauce with a spoon to form balls. The cover it to steam for some minutes.

  • add your vegetables, Though in this soup I only use the onions leafs, (but you can add any vegetables you love to use.)Then taste if the seasoning are moderate, if not you can add more, then stir it together and let it boil together for about 5 minutes.

  • Add your fish and other beef, and let it steam together for few minutes, and here is our Egusi and Squash Soup looking yummy and inviting 😋.

I then place some water water on fire to boil some Semovita.

  • once the water is boil, fetch out half cup of boil water, and then add some Semovita to the remaining boiling water, stir it together thoroughly till it becomes a little tick, then you can cover it and let it boil for some time.

  • Bring down the pot and add more Semovita flours, turn it around thoroughly it's it start forming, then you can place it back on the stove, and add some of the fletch boiled water... Cover it and let it steam some some minutes, then turn it around again. Alas our semotiva is ready.

  • It's prevent heart disease, and has no cholesterol.
  • it's aid and boost the immune system.
  • it protect the skin against dehydration and sun ray damaging effects.
  • it makes our skin glow.

Very rarely do I see a man take over the kitchen and cook a food from scratch to finish! Wow. This looks delicious. I enjoy my egusi soup with Semo and poundo too. Is it true that egusi is best enjoyed when mixed with okra soup?

Smile, I understand your point, but reverse is the case in my family, because we the children are all guys, so we're learn cooking different dishes right from childhood, and now we are accustom to the kitchen.

🤔 I've not tried that combo before, neither do I think have witness anyone mix okra and Egusi soup together, but who knows 🤷, it could be a hit and taste delicious.
