She's right, your sister - it really doesn't always have to be soup!
I like this version for several reasons.
- It comes hot out of the oven and onto your plate. Maybe a few slices of ciabatta, some garlic oil and a glass of red wine. This is my idea of a cosy evening.
- if there really is something left over, nothing stands in the way of soup for the next day.
- take the pumpkin and mix it with boiled potatoes, 1 or 2 eggs and a bit of grits to make small dumplings or gnocchi and cook them in salted water.
A great side dish - it doesn't always have to be rice or pasta.😋😊
Right. Yes, a little garlic and ciabatta, maybe even pumpkin seeds. Beer instead of wine. 🍻
I was also thinking of puree or gnocchi. Ah, but you know what I saw in the shop last time, like a new eco start-up? They were selling sweet potato and pumpkin pasta from a farm. I must try that, too.
