Friday Cooking Contest: Spinach and broccoli omelette served with oatmeal tortilla + fruit salad

Delicious vegetable omelette, accompanied by oatmeal tortilla and fruit salad.

Good night dear Hivers, this time I bring you a simple recipe to prepare a healthy breakfast, this dish is due to my participation in the contest of @indiaunited, "Friday Cooking Contest", where the theme of this week is obviously a healthy breakfast 😂, so I prepared this delicious spinach omelette with broccoli, the truth is that this is the first time my breakfast is like this, and honestly it was very delicious. Come and see the process.

First of all we are going to need some oat flour, usually you can find it in supermarkets but you can also prepare it, you just have to add oat flakes to a blender and turn it on for several minutes, until the oats become a kind of fine flour. It takes me about 10 minutes to grind the oats, it all depends on the blades of the blender.

To prepare a single tortilla you need 6-7 tablespoons of oat flour, 5 tablespoons of milk and a tablespoon of olive oil, or a very fine oil. We are going to add all these ingredients in a wide cup to mix everything very well, until it becomes a very consistent mass, it should be a little sticky, but manageable.

Additionally we can add to our small dough a little bit of grated carrot, but this is optional, it is not necessary if you do not want it. Then we make a little ball with our oat dough, and with the help of a roller we stretch it to give it a circular shape, we cut it to the desired size.

Now we cook our tortilla in a non-stick frying pan for approximately 10 minutes, all this at low heat, when it is a little toasted we remove it.

Now we are going to need some vegetables and dressings, like yellow and green paprika, onion, broccoli and spinach.
We are going to chop in very small pieces some yellow and green paprika (also the red shade to give it more color and flavor), and the onion we are going to grate it, although you can also chop it in small squares.

We will let the spinach rest in water with vinegar for 5-7 min to disinfect it very well, while the broccoli we take it to boil for 7 min, only the pieces that we will use, when the broccoli is ready we will remove it to let it cool for a couple of minutes.

We are going to put everything on a low heat, starting with the paprika and onion (additionally improvise adding a bit of chives). We fry for 3 minutes and then add the spinach for another 4 minutes, when it starts to shrink we add the broccoli, and we continue cooking everything for 5 more minutes, in total it will be approximately 12 minutes frying the dressings so they are ready.

Now to start preparing our omelette we simply beat two eggs seasoned with a pinch of salt and pepper to taste.

We add the sautéed seasoning to our egg mixture, beat it a little and take it to a frying pan to cook our omelette, which you can prepare as you like, if you want to cover it and leave it on low heat or turn it over and cook it on the opposite side, as you prefer.

To vary this breakfast and accompany it with some fruit, I chose some strawberries, bananas and a mango to make my salad.

And the last step is to add some honey for the fruits, and parsley with chopped coriander in small pieces for the omelette.
Finally our breakfast will be ready, the truth is that the process looks very long, but it is simple, it is a breakfast with many nutrients and delicious, I had never eaten something like this or with this combination, but imagine something with fruits and proteins that could feed us well in our first meal of the day.

My breakfast is also accompanied by blackberry juice, and as you can see is easy to prepare perhaps requires time, but it is not for anything complicated, I really hope you like and can prepare at some point.
