Atractiva receta con yuca//Attractive recipe with cassava

Saludos querida comunidad de Foodies Bee Hive, hoy les traigo una receta muy fácil y deliciosa usando las bondades de la yuca, conocida en otros países como mandioca, un tubérculo de alto consumo en nuestra América Latina, un ingrediente que usamos como alternativa al trigo, para aquellos que requieran una dieta especial o sencillamente para ofrecer un plato distinto con este tubérculo.

Les presento un pastel de yuca, alimento gluten free, la elaboración es muy fácil, el resultado es saludable ya que consumes menos harinas procesadas, y su sabor es exquisito. Les presento como hacerlo.

Ingredientes:

  • ½ kg de yuca cocida con sal.
  • 01 huevo
  • 02 cucharadas de aceite
  • 03 cucharadas de harina de arroz
  • 100 g de queso rallado

Procedimiento:

Ralla la yuca previamente cocida, si la textura es muy suave puedes triturar con un tenedor o pisa papas, la idea es dejarla lo más pequeña posible.

Luego en una taza une la yuca rallada o triturada, el huevo, el aceite, la harina y comienza amasar, hasta que se integren todos los ingredientes, evalúa la masa resultante si aun se pega en tus manos, aplica un poco más de harina, estará lista cuando la masa se siente integrada, suave y se mantenga uniforme.

Toma una porción de masa, extiéndela sobre una bolsa plástica, te puedes apoyar con un rodillo de cocina o con la tabla, para esto usa otra bolsa, colócala sobre la porción de masa y extendiéndola para lograr una capa fina y uniforme. Cuando consideres que esta lista retira la bolsa superior, coloca el queso rallado, dobla la masa para formar así la envoltura, corta con una taza que da la forma de media luna, Le puedes dar formas con un tenedor para ayudar a sellar y mejorar su presentación. En este paso puedes variar el relleno con carne, pollo, jamón y queso, lo que tu quieras.

Ahora están listo para cocerlos, yo prefiero hornearlos, pero estos los hice para el desayuno escolar y estaba con poco tiempo, por eso los freí, pero de cualquier manera quedan muy deliciosos.

Así quedarían listos para comer, acompañados de jugo, café, te o cualquier otra bebida de tu preferencia. Les comento que esos pasteles los prepare en la noche los guarde crudo bien almacenados en la nevera y en la mañana seguían muy frescos, listos de cocinar, es una opción rápida y nutritiva, a mis niños les encanta, espero se motiven a prepararlo.

I present a cassava pie, gluten free food, the preparation is very easy, the result is healthy because you consume less processed flours, and its flavor is exquisite. Here is how to make it.

Ingredients:

  • ½ kg of cassava cooked with salt.
  • 01 egg
  • 02 tablespoons oil
  • 03 tablespoons rice flour
  • 100 g of grated cheese

Step by step:

Grate the previously cooked yucca, if the texture is too soft you can mash it with a fork or potato masher, the idea is to leave it as small as possible..

Then in a bowl add the grated or mashed yucca, the egg, the oil and the flour, start kneading until all the ingredients are integrated, evaluate the resulting dough if it still sticks to your hands, apply a little more flour, it will be ready when the dough feels integrated, smooth and uniform.

Take a portion of dough, spread it on a plastic bag, you can support it with a rolling pin or with the board, for this use another bag, place it on top of the portion of dough and spread it to achieve a thin and uniform layer. When you consider it is ready, remove the top bag, place the grated cheese, fold the dough to form the wrapper, cut with a cup that gives the shape of a half moon, you can shape it with a fork to help seal and improve its presentation. In this step you can vary the filling with meat, chicken, ham and cheese, whatever you like.

Now they are ready to bake, I prefer to bake them, but I made these for school breakfast and I was short on time, so I fried them, but either way they are very delicious.

This way they would be ready to eat, accompanied by juice, coffee, tea or any other beverage of your preference. I tell you that I prepared these cakes at night, I kept them raw well stored in the refrigerator and in the morning they were still very fresh, ready to cook, it is a quick and nutritious option, my children love it, I hope they are motivated to prepare it.
