Happy community night. Today I share this tasty dessert with Catalinas stuffed with dulce de lechoza, this dessert is made by my mother for sale and thus have an extra income to bear the difficult economy.

The ingredients of this dessert are;
- one kilo of wheat flour
- a kilo of sugar (for the Melao or syrup)
*Egg
*Vanilla essence
*Edible oil- Dulce de lechoza
We use the sugar to make the Melao or syrup, it is placed in a pot over the fire with half a kilo of sugar, it will caramelize when it turns brown, a liter of water is added and the other half kilo of sugar is added. and mix, let it boil for 10 minutes and turn off, let it cool down to use it.
Once we have the Melao ready we make our mixture, add a little Melao in the cup and place the egg, once mixed we add the wheat flour, a tablespoon of vanilla essence and the oil, we do this in parts to avoid lumps.
When we finish making the mixture we let it rest for a time of 5 minutes so that it ferments, we begin to take a small amount of dough, crush a little bit and fill it with the dulce de lechoza, close and crush.
We are assembling the catalinas and we put them on a tray previously greased with oil. While we are doing this, we are burning the wood in the clay oven.
When we have the embers and the oven is fully hot, we sweep the embers back, put the tray in and close, due to the high temperature of the oven, the catalinas are cooked in approximately 5 minutes or less.
When removing the trays we take a spatula, move to prevent them from sticking and continue cooking. Once cold, we transfer them to the cups to take them to the wineries where they will be sold.
This dessert my mother makes twice a week and cooks up to 4 kilos of wheat flour, depending on the order they make. Catalinas are very tasty to eat as snacks accompanied by a good cup of black coffee or milk.
