Quick fix dinner

I've never had an intense love for cooking and these days I tend to spend less and less time inside the kitchen due to my work demands, however, I ensure that I always have all my necessities readily available when I need a quick unplanned dinner.

In a bid to spend less on food and spend minimal time inside the kitchen, my partner and I resorted to purchasing rice in bulk from a restaurant. So, all we have to do is pop a plate or 2 inside the microwave whenever we need it.

We also love mixing up things a little by adding a lot of fried plantain to our meals, thereby reducing the quantity of rice we consume. Additionally, we also invest a lot in proteins so we have that stored away as well.

I'm not the best at taking pictures of food, so I forgot to show the process of making the fried chicken, clams and escargot, I'll try to be a lot more involved in the future.

Last Night's Dinner

For dinner last night, we had our usual restaurant-bought jollof rice which we split in two, some stewed escargot (snails), clams (water snails), fried chicken and plantain.

I started by thawing the protein that had been in the freezer for a while, while I popped the rice in the microwave. While that was going on, I washed, peeled, chopped and dumped the plantain inside a pan of hot oil.

When that was done, I threw my protein into the microwave for a few minutes, shared everything into 2 dishes and my dinner was done.

I'm not the best at making dinner look fancy or pretty but I'm learning. I'll be putting in a little more effort in the future.
