During my time visiting Mexico I stopped by a Ranch in the central Mexican plateau near San Miguel de Allende. this area is known for its harsh environment, there are black widows, rattle snakes, coyotes, the sun can be extremely fierce and yet the night is cold and in the winter there is frost. So to grow food its essential to have a green house. And buy utilizing the thermodynamic properties of the earth, you can dig a ditch and create a half sunken green house, this means that their remains an average temperature within the tent, it doesn't scorch the plants but they can also avoid frost.
In true permaculture style no water is wasted this is why there is a bath tub inside the green house, so grey water can feed the plants, its also a nice warm place to take a bath in the day time.
I was looking around the greenhouse to find something to make tacos, there were some aubergines just becoming ripe. And it seems like other friends were taking an interest in these delights. Of course everything in this green house is grown naturally within any chemical pesticides.
There were many plants and herbs growing in there, squashes, zucchini, tabac, herbs, kale, tomatoes and much more
The tomatoes were particularly good, since it was almost the end of the summer season and these tomatoes were at their peak, so many varieties, colors and shapes and they were super delicious and sweet eaten straight of the stalk.
I made a little salsa with them and chopped up the kale and made some fried aubergine and chilies, all wrapped in a local handmade corn tortilla mmmmmm these tortillas are to die for, and the real deal is only here in Mexico!
