To answer your query, it depends on the parents. Some parents can be very assertive and unyielding, in that case, the couples could either break up or elope. I have heard of cases in which couples in love had to break up because their families didn't agree. There is this adage that we quote that says "what an elder will see while seating on a chair, if a child should climb a tree, he will not see it. So families refusing to allow their children marry into a particular family is because they foresee something about that family or the spouse that could be a problem in the future. But there are parents who would do anything to make their children happy, so they will just have to accept the groom family with whatever the fault they have.
Elders do have more experience, however, I don't believe that they are always wise. Sometimes, they simply don't want their offspring to marry their preferred person because it's not upto their bogus criteria. For instance, I have seen cases in which there was no issue with the girl but the parents of the boy refused to accept his choice because they didn't want a daughter-in-law out of their own caste. That's pretty illogical in my view
