What is my favourite holiday food and why?
Besides my reindeer antler alice band, complete with jingling bells, food is undoubtedly the most important part of Christmas celebrations in my home.
I'm usually a staunch Trifle Girl: and I'm always sure to add enough Amarula cream liqueur to send the kiddies to sleep and the adults into Christmas Carol mode (festive bribery and corruption😈🤭🤶🎄).
This year since it is a very special Christmas and our 1st Christmas together as a blended family, I'm going to try something different and very special: An Amarula cheese cake drool 🤤🤤🤤
For those of you who are not from South Africa and are wondering what on earth I'm talking about, Amarula is a 17% alcohol cream based liqueur, much like Bailey's, but is infused with marula fruit, giving it a very gentle fruity taste: like a combination of mango and pawpaw and tinned peaches.
So, for my partner's birthday this year, I gave cheesecake a whirl for the very 1st time, and although it did not go totally according to plan, it turned out to be absolutely DIVINE. I am going to attempt to tweek it a bit to fit in with trifle flavours, but here's an idea of how my first attempt went (it was devoured by four of us in less than 48 hours).
Oreo, Chocolate Ganache and Amarula Fridge Cheese Cake:
So the dark chocolate ganache was actually supposed to be drizzled over the cake, but I was so paranoid about the fridge cheesecake melting or sticking to the pan or falling apart, that I kinda just dumped it all on top, accidentally creating an extra layer of extraordinary and outlandishly delicious chocolate mud which balanced out the cheesecake, beautifully.
I then topped it with the remaining oreos (crushed and whole) and bibbityboppityboo, a miracle cake was born (Of course, I am a professional and I managed to not get caught eating it out of the fridgelight at midnight once everyone had had a piece😈🤭)
So, for this Christmas, I'm going to use white chocolate ganache, mulberry reduction, vanilla oreos, double cream and strawberries.

Ooo, I love all kinds of Cheesecake. So rich, creamy, and so dangerous in large quantities! Suggested serving: One sniff. I don't remember seeing Amurula Liquor in my local Liquor store but I have tried variations of Cheesecake with; Amaretto, triple sec, Kaluha and Bailey's Irish creme with varying results.

This sounds super cool and weird although I know so well about amarula alcohol Milky based drink, it tastes so good and I love it so much whenever I drink, sometimes I do take an overdose of it... buttttt using to make a cake woah and I must say you're a big different baker cause I have never heard of that type of cake!

Hello @clairemobey. This has to be the most decadent Christmas dessert. Cheesecake is one of my favorite. But to add Oreos is over the top. The dessert looks amazing. Since this is your first blended holiday together, I'm sure this dessert will quickly become a holiday favorite.

Amarula has always been a high demand milky drink here in Nigeria, second to Bailey's. That cake looks very delicious

Hehehe! Yes, Amarula is way too yummy and because, like Bailey's, it's cream based, I don't recommend mixing it with any other alcoholic beverage curdles 🤢
Also it's so delicious it's easy to over indulge. If you are going to have some as a treat, pour it in a martini glass over crushed ice.😏
I am no super baker though 🤦♀ I've had plenty of flops. I tried to make chocolate honey comb crunchie and just ended up with diabetes mud.
Lock down here in SA meant I had a lot of time to experiment, so I discovered I can make all kinds of stuff now.
My chocolate cake and my carrot cake are absolutely legendary.
I'll be posting recipes and easy to follow methods soon.
This one is a fridge cheese cake as opposed to a baked one.
Yeah, my kids are amazingly helpful: cause they know they're gonna gobble it! It's a win win 🎂
