Carrot Halwa – A fusion of taste and tradition
Today's evening became a little special, because the pure carrot halwa is made at home! The fun of eating carrot halwa in this winter time is different. The aroma of milk, khoya, cardamom and ghee spread throughout the kitchen, as if the whole atmosphere had become sweet.
It is made entirely of milk, so there is a distinct softness in taste and texture. Carrots slowly cooked in milk released their natural sweetness, along with the scent of ghee and the light aroma of cardamom. I sprinkled some bay leaves and some almonds on top, which added another great dimension to the taste.
A different emotion is working towards this halwa as it is made by hand. It is much healthier than shop halwa and the difference in taste is obvious. It felt like the days of childhood when the whole family sat together to eat - when mother used to make it, and we used to eat it with fascination.
Carrot halwa is not just a dessert, it is a part of our winter tradition. Such a taste, which once in the mouth will remember the story of a thousand years old!
