I admire your spunk! I too have issues growing a garden, but part of that is where I live and things like slugs, who love to devour anything planted and then some! I'm hoping for a better outcome next year! As for solar; we started with one panel and currently have 56 panels on the roof and ground mount. It is a 6.3 KW system. During the summer, we run 90% on this system. In the winter, we run about 65%. We are not grid tied, so we can't sell back to the utility company. We do have a battery bank housing 12 golf cart batteries and run a 24V system. Does it work? You bet! We've run everything from a light to air conditioning with our system. Great to hear from someone who has already done it. It is really inspiring to hear 56 from 1. It may be off-grid but you are not not depending on the existing electrical grid, instead utilizing what the nature's gift. That's what makes the difference.
