Ladies of hive #208: A Recipe of a Wonderful Dish that Makes My Day better.

Good morning Everyone and welcome to my Blog. I am very excited to participate in this week’s contest.

In life, we have good days and not so good days, and on those good days we eat something very special and this makes our day better. I was communicating with a friend of mine and I told him I love eating good, and I love doing that on very good days so that on the not so good days I will eat anything I see.

One of the wonderful dishes I eat on a very good day is my Native dish called “Ekpang Nkukwo”. This particular dish is very stressful to prepare but very delicious and after eating I always have this satisfaction and I am always joyful eating it. Because of how stressful it is to prepare it, it's not a normal dish we eat everyday so when it is finally prepared you can see the joy on everyone’s faces because the most favorite and delicious dish has been prepared.

I will be sharing a recipe for my most wonderful dish of Ekpang Nkukwo before that I will love to state the ingredients used in preparing the dish. Like I said it’s a very stressful process but it’s worth every time you invest to prepare for it.

Ingredients: Cocoyam, water yam, cocoyam leaves, dry fish, goat meat, kpomo, crayfish, periwinkle, scent leaf, Palm oil, pepper, seasoning cubes, salt.

Method of preparation: Peel, wash and grate your cocoyam and water yam and set aside.

Cut the cocoyam leaves or vegetable leaves into small sizes and set aside.
Wash and properly Season and boil the meat, kpomo and the periwinkle and set aside
.

Pour part of the periwinkle into the pot to form a base. Add some palm oil at the base of the pot.

To the cocoyam and water yam mixture, add a little salt and a cube of seasoning and mix properly.

Use the cut leaves to make small wraps with the cocoyam and water yam starting from one tip of the leaf to the other end. Continue until all the mixture is finished.

Boil water after all the mixture has been wrapped. Add the remaining periwinkle, dry fish, crayfish, pepper, seasoning cubes and salt to the pot.

Put the pot on fire and pour in the boiled water. After about 15 to 20 mins add the meat and the meat stock and allow to cook for about 10 to 15 mins.

Add the remaining palm oil, cut through with a knife to reduce lumpiness and stir with a wooden spoon. Cook for 5 mins on low heat and finally add your scent leaves.

Serve hot and enjoy.

This is the method of preparing one of the most delicious African dishes called Ekpang Nkukwo. Even though it can be stressful, this makes me better while eating it, and it stirs my spirit. Try using my recipe to prepare this wonderful dish and you will enjoy the outcome.
