I like to base my thoughts about angels and demons on Canonical evidence as spirits that can assume different forms yet have a true state. Both can assume a human form or, take over an existing human conscience should that person allows it by free will. Hence, most of encounters are humanoid in appearance not to alarm the person(s) concerned.
My clearest encounter of a Demon was where mere days after I became a new Christian, in the middle of the night my room was darker and colder than usual, and I felt that I could not move. A voice spoke to me as if in a dream, “So now you are a Christian now, what are you going to do?”
I replied, “In the name of Jesus Christ my Lord and Savior, BE GONE FROM ME!” He growled and departed. I was free, my room returned to normal, and I thanked my Lord.

Yeah, I think the same thing that angels have a specific form that we can't see. But it transforms according to their intentions to get closer.
