Made this Cold Noodles (Liang Mian, 凉面) for our staff supper some time back. I saw this recipe making it rounds on social media so decided to try making it as well.
My memory of the best version of this I ever had was when I went to Kunming over 10+ years ago. So with this staff meal, I tried to replicate the flavors to what my memory serves.
I used rice papers for the noodles which I simply sliced into noodles. The sauce is what makes this dish which is made from soy sauce, black vinegar, sugar, sesame oil, coriander, spring onions, sesame seeds and white pepper.
The cut up rice papers are soaked in water for a couple seconds then into the sauce. I recommend to immediately serve and eat it coz letting it sit the noodles will absorb all the sauce and it won't be as it should be.
Overall it turned out pretty delicious but I do recommend to get glass noodles instead as making this with rice papers in bulk took a lot more effort than expected.
