I think that when a developer tries to make their game unique they only have one shot to get it right. If the one unique thing about the game is even a little bit messed up than that becomes the main thing that every critic will point at that ruins the game and the company funding the developer might pull their funding and the developer never gets a second chance to tweak it.
As you said though, the game industry is a business and not everyone is looking to venture into new grounds that may or may not turn a profit.
I have seen that it is often the spinoff games that try to do something new and creative that if the players rave about will make its way into the mainstream title.
The implementation of new mechanics in a game is a interesting conversation though and I too wish that developers would at least have the option to turn on and off their unique game features so that if its a bother to some players they can turn it off.

Exactly, but as I said in another comment, it may also be because most gamers today are already used to the titles that have come out in recent years and have continued until now, they also would not like to risk trying games they do not know if they will like, thank you very much for your comment.
