A little bit of everything, my friend. It's nice to see your experience over time in these games of the fighting genre, honestly it's a genre that I don't usually play much but at the time I got to play many titles that gave my childhood a full happiness. I am very fond of “Tekken 3”, because it was the first fighting game that I really liked, I had my PlayStation 1 console at that time.
Bloody Roar was also another title that I got to play on my PlayStation and I also liked it, but not as much as Tekken.
I think you have much more experience than me on this point, as far as I remember I only had two consoles, the Nintendo NES and then I jumped straight to the PlayStation. After that I always had the availability to have a PC computer.
I have very little information about the other consoles you describe here but I guess they were very cool for the time, I will dig a little to know more about them.

I had forgot to mention it, but I remember that when I was very young, my brothers had a Playstation 1...but something soon happen to it so I couldn't really mess with one during a time I had enough age to truly remember it, which is why most of my experiences with PS1 games were and are through emulation.

I always found cool that I was able to grow for so many years with a real N64 though, despite also finding a variety of games I only played through emulation. I remember wanting once for Christmas an used copy of Excitebike 64 lol- never got it because parents wouldn't ever risk getting any used stuff online...which is how at one point after our N64 went kaput, they instead went the extra mile to buy the only new one available online locally...and happened to be a Special Pikachu Edition 😅
[That one is definitely a story for later, if I haven't already written about it years ago]
