I feel the same thing about wanting a healthy mix of Tech and Fantasy. Final Fantasy 7 was my gateway and from there played all of the games and even going back to Final Fantasy 3.
Although honestly Final Fantasy Tactics is still my favorite one.

Final Fantasy Tactics is great, some of the off-pins are plain amazing, that's why I mentioned multiple times that I was only talking about the numbered editions! Since those are the gateways for most people :-D!
