Something you could investigate to see if it'll grow in your soil is chard, especially Swiss chard. It's a bit like spinach, with good iron and vitamin content. Planted in autumn, it will grow slowly and steadily through winter at a time when everything else is dormant and unproductive, allowing you to harvest a leaf or two off each plant every couple of weeks. But it'll need protection if you've got slugs and snails, they love it !
