Sweet Potato Harvest!
THIS IS A FIRST for me! I've never grown Sweet Potato. I usually only eat it, once a year. It's just not my most favorite vegetable. AND, I usually only cook it a few times a year. Typically bigger meals, over winter, and definitely I roast some at Thanksgiving. but again, a bit bland for me.
I WAS WRONG
Early last February, I take a few Sweet Potato, pop them in some dirt, and cover them, for some darkness for 2 weeks. THEN, I put them under my grow lights, for a bit. After a couple of weeks, I begin to see some Sweet Potato Starts.
I snap these off, and put them in water for a few weeks. Once it is warm enough, these Starts get transplanted outside. (mid March or end of March).
The Sweet Potato is actually NOT a potato at all. it is more closely related to Morning Glory flowers. They do take a long time to harvest, though, so, be patient, and after 120 or so days, you will be rewarded. In case you are curious, I LOVED the taste of home grown sweet potato. I roasted them, and drizzled a little Vermont Maple Syrup over top.

Interesting to see the sweet potato slip process. I just assumed it would be like potatoes 🤦
that syrup was from the wedding a month or so ago,m when I was up by the big lake, and south of burlington.
Lovely! But your Sweet Potato was thin. Why is that?
quite a few were actually normal sized, but you are correct, many were thinner. I use those thinner ones, for making sweet potato fries (i use the air fryer)
and also, I use the skinny ones for the roasting pan. (olive oil, sea salt, and with onion, carrot, small potato, and celery)
