You know, I never take it for granted. I don't know if it's a kinda mindfulness practice, or if travelling and being on HIve show me how other people live, or whether I am just giddy with joy for being alive and privileged the way I am. Honestly I would slap myself whenever I feel ungrateful!
Now, it's only good with sugar really. It'd be interesting to see what you do with it. Baked quinces with spices/rum and some kind of cream (vegan of course) and pickled quinces with vegan cheese, or spanish style membrillo seem to be the only thing one can do with quinces! Once they are pickled I guess they'd be interesting in another kinda marinade like a chilli oil in some kind of wrap? I don't know, I find it hard to think out the box with quinces.
