Next to my mom’s vegetable garden at the Farm, there is a lush forest of naturally grown bamboo. Every summer, the soil covers these bamboo shoots, especially after the rain, when clusters of them emerge, bringing a sense of joy just by looking at them.
Walking into the bamboo forest, once you see the bamboo shoot tips, gently loosen the soil along the edges. Be careful not to harm the small bamboo shoots and roots while cutting the connection between the bamboo roots and shoots. This helps keep the shoots tender and fresh.
Finally, cover the area with soil again to allow the bamboo roots to regenerate new shoots. The bamboo forest is pesticide-free and free from pest pollution, so there's no need to worry about health risks.
The shoots can be eaten raw after peeling, with no sour or astringent taste. You can also wash and stir-fry the fresh bamboo shoots or make "Xiandu" soup. They taste crisp and naturally sweet.
