It's mid-July and already the garden is bursting with produce. I pulled some of the garlic this week and have it in the greenhouse drying on the racks.
One of the red cabbage was large enough to pick.
I decided to make spicy slaw with this one.
This is the first time making it and I hope I will like it. I will let it set for a couple of weeks before trying it. I have four more cabbages that will be ready in August.
The first cauliflower was ready so I will be fixing that for dinner tonight.
All the red onion bulbs needed trimming, I topped them all....
I had a huge pile on the counter to chop up.
Next, into the dehydrator to dry.
I ended up with two large baking trays of dried leaves.
I ended up with two quart jars of onion powder for the pantry.
Every day I have been picking the bush beans which have been producing wonderfully in the tower gardens.
I save them up for two days and then I canned them for the pantry shelves.
So far I have 6 jars and the plants are still going strong. I am hoping to have a dozen jars from these two towers.
The first small round of beets were ready. We enjoyed the greens wilted with onion, garlic, and red wine vinegar for dinner one night.
I ended up making spicy pickled beets and got three pints on the shelf. I will be planting a large crop for fall harvesting once all the onions have been pulled.
It was a good week for harvesting and processing some of the veggies. I will be very busy once the cabbages are ready this week. Happy gardening my friends.
Until next time, this is Sunscape
Sun. Scape. Ing Your Day
That's a brilliant idea for using onion scapes. I usually eat them, but I have so many.
Me too, that's why I decided to dehydrate the onions this year.
I have so much food to process! Thanks so much for the ideas you give me. Love that onion powder one. My onions stalks are falling all over the place. Have you ever tried to pickle them along with, say, the green beans? Or used them in your cabbage slaw?
Thanks, I haven't tried using the tops in that way, I bet they would be good though. Have fun processing all the goodies. It seems like every day now I have to do something from the garden.
Wow! Lots of vegetables to last the whole year!
Such a beautiful, colourful, industrious post.....thank you for bringing these lovely projects to Hive....Looking forward to see what you do with the cabbage.
Cheers, Bleujay
Thank you, I will keep posting how I process all the veggies.
As always, thank you, @ewkaw ♥
The spicy slaw sure looks good! Wow! You have a lot of produce - what a blessing!! I love seeing what people can grow in their gardens! And I love the beans in the tower! That looks like a great way to grow them!
I can't wait to taste the red slaw as it is my first time making it. I decided on using the towers since I don't have a lot of room in the large garden. The beans have done marvelously in them. I may even try strawberries next year in the same manner. Gardening is so much fun!
We have friends who do strawberries in a tower. We have a raised bed with them in it, but someone threw some tomatoes in it apparently as that's what is currently growing in there! Strawberries don't seem to like the rain we get here and much prefer dry season!
That is good news as I think the strawberries would do well in the tower gardens. I will have to find some this fall to plant. :-)
I bet I have beets ready but most everything else is lagging behind you. Loved the color on the red onions!
I wish I had more room to have started the beets but I will do another round for fall harvesting. Your garden will catch up fast enough and keep you busy ♥
Everything looks so fresh and quality, simply delicious, really, top quality vegetables.
Thanks, @actioncats the produce from the garden is awesome this year. Happy gardening to you.
Wow, you are very inspiring. how all the vegetables can be stored and harvested so well. Until in the end everything goes into the stomach and that is very good for life.
Awe thank you, I do my best to grow good quality vegetables for healthy eating.
So much produce, so much food! With your magic fingers, they actually have no choice... 👍
I love your kitchen but for distance, I would visit for a jar or two.... 😊
Looks yummy, hope to grow own garden this or next season.
