Air Fried Spring Roll (using leftover food)

Greetings to all fellow Hivers!

How is everyone out there right now? I hope all is well with you today.

I am here again sharing my homemade dish as usual. Last weekend, I cooked sautéed ground pork with veggies. There was some leftover of that dish, so I decided to cook spring rolls or lumpia from my leftover food the next day. I cooked it using the air fryer to make the dish healthier.

I still got some help from my daughter @tegoshei at that time because it was on a Sunday. She's the one who wrapped the leftover mixed ground pork and veggies in a spring roll or lumpia wrapper. This was how we did it.

Air Fried Spring Roll (using leftover food)




INGREDIENTS:





•Leftover food (ground pork meat mixed with veggies)
•A piece of banana plantain
•Lumpia Wrapper
•Water (to stick the wrapper)
•Canola Oil

For Dipping:



•Onion
•Spring Onion
•Tomato
•Lemon
•Vinegar
•Soy Sauce
•Sugar
•Ground Black Pepper

PREPARATION AND COOKING:




Heat the leftover mixed ground pork and veggies.

I added a piece of ripe banana plantain and cut it into small cubes. We happen to have some banana plantain and I remember that it’s really good with spring roll wrappers like when we make banana toron which is one of my favorite snacks.

Anyway, back to cooking…




Re-cook the leftover dish with the addition of banana plantain until the sauce becomes totally drained.
When it's done, transfer it to a bowl and let it cool down for a few minutes.
When it's cool enough, put some of it in a spring roll wrapper and wrap it properly. Seal the edge with water.

While my daughter was wrapping the dish, I made the dipping sauce.


DIPPING SAUCE:

Wash them all the spices like tomato, spring onion, onion, and lemon and then cut them into small pieces except for the lemon.
Then mix the spices to the mixture of vinegar and soy sauce with the powdered spices.
Squeeze some lemon juice, then set aside.


SPRING ROLL:




Preheat the air fryer (180-190 degrees Celsius for 5 minutes) and then brush the pan with just a little bit of canola oil so the wrapper won’t stick.

Then put the spring roll into the fryer.




Cook it until it becomes golden brown and crispy (at 180-190 degrees Celsius for about 15-25 minutes).




Then, cut them into bite sizes. They are now beautifully air-fried bite sizes of spring rolls made from the leftover dish.

Anyways I really plan to cook because we have still lumpia wrapper and banana plantain..though we had banana plantain snacks already but not yet toron. The remaining banana for sure for the toron..even without langka..
