A pleasant and blissful day to each and every one in Hive.
Here I am again sharing the dishes I prepared for my family. This time, I have some ”Fish Paksiw” for me and my husband. (Paksiw means to cook and simmer in vinegar) and I cooked a separate dish for my daughter @tegoshei because she can't eat seafoods due to her allergy. Instead, I cooked Highland Corn Beef Chili Garlic for her paired with crispy fried eggplant. So here are the said dishes for our dinner that day.
Fish Paksiw with Veggies or Vinegar Simmered Fish
INGREDIENTS:
- Fish (any kind of fish will do)
- Eggplant
- Okra
- Ginger
- Onion
- Garlic
- Vinegar
- Soy Sauce
- Salt
- Magic Sarap Seasoning
- Long Chili
- Brown Sugar
- Canola
- Garlic Oil
For my daughter's dish:
- Highland Chili Garlic Corned Beef
- Onion
- Eggplant
- Egg
- Flour
- Crispy Fry Garlic Powder
- Canola Garlic Oil
PREPARATION:
Wash and clean the fish thoroughly.
Wash the eggplants, okra and long chili.
Peel and wash onions and ginger.
Peel and crush garlic.
Wash the kalamansi or Philippine lime.
Slice the eggplants depending on your desired shape and size.
Just cut the head part of the okra or lady finger.
Slice onions. Slice ginger to a bigger size and then crush it.
Put the fish in a pot or casserole. Also put the ginger, onions, and a bigger-sized crushed garlic.
Add some vinegar, soy sauce, and a pinch of salt. Then it is ready to be cooked.
For my daughter's viand:
Wash and slice eggplants.
Peel and wash onions and slice them.
Crack and beat egg, add 1 tbsp flour and 1 tbsp crispy fry. Add garlic powder and then mix thoroughly until having a fine texture.
Then coat all the sliced eggplants with the batter mixture.
Remove the corned beef from the can and transfer it to a clean plate.
COOKING TIME:
Cook the fish by simmering in a medium heat. (I cooked the fish outside in our extended kitchen. I left it there for a few minutes to cook my daughter's dish inside the house.)
For my daughter’s dish:
Heat a little amount of canola garlic oil.
Sautee onions until aromatic, then add the chili garlic corned beef.
Stir it regularly until the corned beef is already cooked. Then transfer the cooked corn beef to a smaller bowl.
Then clean the pot and heat some garlic canola oil and fry the battered eggplant until it is cooked.
Back to the Fish Paksiw
When it starts to boil and the fish are a bit cooked, that's the time to add the veggies.
Add the okra, eggplants and long chili. Then cover and continue cooking.
When the veggies start to wither put the final seasoning. Put 1 tbsp of brown sugar, add a little of tabasco sauce and a little Magic Sarap seasoning. Continue cooking until the fish and veggies are already cooked.
And it’s all done and ready for plating.
I do love to eat fish and other seafoods, but I seldom cook them at home because of my daughter's allergy.
