HUMBA or BRAISED PORK with EGGS

The holiday is not over yet. Perhaps some of the Hivers are still having fun traveling to other places for a holiday vacation. But no matter where we are, whether on a staycation or just at home, there could always be sumptuous food during this kind of holiday.

I just stayed at home with my family, but I cooked some meat dishes and made sweet desserts. It’s a cheat day for someone like us trying to maintain a healthy lifestyle. Well, it's a holiday so there's an exception... hehe

One of the dishes I cooked last Christmas Eve was "Humba"

Humba or Homba is a popular Filipino braised pork dish from the Visayas, Philippines.
It is typically made of pork belly and vinegar, but I only used pineapple juice instead of vinegar to make it a bit healthier and more delicious.

Some of the ingredients are shown in my photos and again I selected ingredients that can't harm my daughter who is allergic to some seasonings and condiments.

HUMBA or BRAISED PORK with EGGS





INGREDIENTS:





  • Pork
  • Eggs
  • Pineapple Juice
  • Sprite
  • Soy Sauce
  • Ground black pepper
  • Onion
  • Garlic
  • Bell Pepper
  • Taosi
  • Black beans
  • Salt
  • Magic Sarap
  • Brown Sugar

PREPARATION:






While preparing all the ingredients I boiled some eggs at the same time.

Wash the pork thoroughly and then dry it up.

Peel and wash the onions and cut or slice them into your desired size and shape.

Crush and peel the garlic. You may either crush them or cut into small pieces.

Wash and cut the bell pepper into cubes or strips.

Then, set aside with the rest of the seasonings and other liquid ingredients.

Peel the hard-boiled eggs, slice them in half, and then set aside.


COOKING TIME:





Put the pork in a cooker, and rub some salt. Pre-cook the pork on low to medium heat until the oil comes out.
If it's too oily, remove some of the oil from it.





Then add pineapple juice, Sprite, soy sauce, taosi, black beans, and bay leaf (I pounded the bay leaf a bit). The amount of these ingredients will differ according to your taste or preference.





Let it boil for a few minutes, then add the onions, garlic, and bell pepper. Continue to cook until the pork becomes tender.

Add the hard-boiled eggs. Check the taste and add some seasonings if it’s still lacking. You may add a bit of sugar, and ground black pepper. It’s optional, but you can also add spicy sauce like Tabasco to have a bit of a spicy kick.





Continue to simmer… this time on slow heat until the pork is fully cooked. It must be tender and juicy.





And it's all done.

I may have incomplete step-by-step photos because I was cooking a lot that same day and crossing from my cooking table inside the house and in the extended dirty kitchen outside, but honestly, my pork humba really tastes good. Doesn’t it… @tegoshei and @adamsale??? hahaha (palaban)
