Let's have some sweet and creamy dessert.
I made a "Graham Fruitcake" last Christmas Eve, but I am a bit sad because I accidentally deleted the pictures of the whole ingredients in one take as I always did in my posts. I was deleting some old photos on my phone at that time. However, it can still be seen in my step-by-step photos in the preparation so I still decided to post and share them here.
It was supposedly a fruit cocktail cake but I prefer and love fresh fruits more, so I mixed a fruit cocktail can with a variety of fresh fruits.
My Creamy Graham Fruit Cake
INGREDIENTS:
- 1 pck Graham Crackers
- 1 pck Crushed Graham Crackers
- 2 Angel Creamer
- 2 Evaporated Milk
- 1 Condensed Milk
- Cheese
- 1 sachet Unflavored Gelatin
- 1 small can Fruit Cocktail
- 1 cup Fresh Mango (sliced)
- 1 cup Fresh Yellow Watermelon(sliced)
- 1 cup Fresh Apple(sliced)
- 1 cup Fresh Papaya (sliced)
- 1 sml jar Green Nata de Coco
- 1 sml jar Red Nata de Coco
- Butter
PREPARATION:
(Chill the creamer overnight and the evaporated milk.)
Mix the chilled creamer and evaporated milk using a whisk until it becomes smooth then add the condensed milk and set aside.
Melt some butter in a pan or cooker.
Put some crushed graham in a big container (a molder or any Tupperware will do). Then, mix the melted butter with the crushed graham. Compress and flatten, then refrigerate.
In a pan, pour 1 sachet of unflavored gelatin. Add fruit cocktail syrup and mix properly. Put on the cooker and heat the mixture slowly on low heat while stirring it continuously.
Then add the dairy ingredients(creamer, evaporated milk, and condensed milk). Continue stirring and then add some grated cheese (this is just optional… my purpose is not only to lessen the sweetness but also to add a delightful flavor).
Remove it from the pan and transfer to a large bowl or Tupperware.
Take out the compressed graham from the fridge, top some fruit cocktails, sliced fresh fruits, and nata de coco. Pour the creamy mixture and top it with some pieces of graham crackers. Repeat the same steps one or more times.
After this layer, I added crushed graham and creamy mixture, then mixed them slowly, and added the final toppings of mixed fruits. Then, I refrigerated it.
Here’s the result of my super yummy and creamy graham fruit cake. My family loves it and asks for more. We also shared some with our neighbors.

I love such fresh fruits/veggies in my food. This cakes looks totally different from traditional cakes and I am quite sure about its fruity fresh taste. Just one question. What is the meaning of Graham in this cake?

Graham is a kind of biscuit or cracker that are often used to make the crust or to layer a fruit cake and other refrigerator cakes like cheese cake, mango float and others. 😊
