My Daughter's Fluffy and Yummy Carrot Cake & Cupcakes + Carrot and Raisin Cake

I just wanted to share my happiness to everyone out there. It was a special day for me last Thursday, t'was a day of my existence. As usual, I don't want to celebrate my birthdays partying or with a crowd. I always want it to be a simple celebration with the family. In the past, we used to celebrate it by eating out or dining out with the family after going to church for thanksgiving.

(including the smell of shrimp), so it's not safe if I cook inside the house. She then suggested to just order it from a restaurant.But last Thursday, we simply celebrated it at home. My daughter @tegoshei asked me days before my special day about what I like... she suggested some of my favorites like shrimp and other seafood, but I declined because I can't cook outside yet. She's allergic to it

I know she just wanted to do something for me, so I asked her to just bake me a carrot cake. But since we don't have an oven yet, she baked the carrot cake using air fryer. We prefer to eating homemade cake nowadays to buying a fancy cake from our favorite cake shops. It's always best to take care of our health first and foremost.

So, here are the carrot cake and cupcakes that she made for me. (She also shared her recipe, so I could share it here too.)


Carrot Cake & Cupcakes + Carrot and Raisin Cake





INGREDIENTS:





  • Carrots (2 small size - grated)
  • 4 eggs
  • 1/2 cup evaporated milk (later adjusted)
  • 2/3 cup cheese (later adjusted)
  • 5 tbsp canola oil
  • 1 tbsp vanilla extract
  • 1 1/2 cup flour
  • 1 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup white sugar
  • 2 tbsp condensed milk
  • raisins


PROCEDURE and COOKING:



Prepare a big bowl to make the cake mixture... and add the following:

Grated Carrots

Eggs

Milk (preferably soy milk, but we ran out of it and there's evaporated milk left in the fridge)

Canola oil and vanilla extract. (You can use melted butter if you like)

Cheese (grated)

Mix everything well before mixing in the rest of the ingredients...

Flour, baking powder, and baking soda. (Usually, she adds a pinch of salt, but she already added cheese, so she skipped the salt.) She also added white sugar after this.


She said that after mixing, it looked a bit dry so she added more evaporated milk and cheese, but she didn't really measure them.

Lastly, she added some condensed milk. (She said she usually uses brown sugar which is 1:3/4 ratio (flour:brown sugar). It's mostly 1:1, but she adjusts them. We only had white sugar, so she added 3/4 cup of white sugar in 1 1/2 flour + 2 tbsp condensed milk.)

Let's continue...


Preheat the air fryer with the silicon molder at 160 degrees Celsius for 3 minutes.



She added two cups of the mixture and cooked at 160 degrees Celsius for 25 minutes.

The first batch is done. Then, she added some mixture to the cupcake silicon molders... and cooked at 160 degrees Celsius for 15 minutes.



Then for the last batch of mixture, she added some raisins and cooked at the same temperature for 25 minutes,



I was so delighted with the outcome. She always wants me to taste first every time she bakes some cake and cupcakes. Like me, she doesn't have any specific measurements of the ingredients, either. We always base it on the taste we like and, on the texture, and consistency. Not to boast, but it always tastes good.

The carrot cake was so fluffy, the sweetness was so perfect for me. Not too sweet and not bland... It's really yummy.

I am so thankful to her for always putting an effort to make me happy. I am really so blessed to have @tegoshei as my child. I am one proud and grateful mother here.

I really am a very proud mother. Yes my daughter can really bake yummy cakes thru air fryer. Sometimes she bake some banana and lemon cupcakes and even bibingka too. 😊

Yes she does and I love and enjoy requesting her to bake some cakes when she's having a free time from work. I really love all her cakes especially her bibingka using air fryer..🥰
