I am now back with my home-cooked recipes.
For now, I'd like to share how I made one of the popular dishes here in the Philippines. It is called "Hardinera or Everlasting." It is ideal for special occasions like Christmas, birthdays, fiestas, etc., and even regular days.
I prepared this for our Noche Buena last Christmas Eve. I was so lucky because I had some helping hands that day, especially from my daughter @tegoshei, who loves slicing and cutting meat and veggies and taking photos.
So, please come and join us in cooking "Hardinera/Everlasting".
My Home-Made Version of Hardinera/Everlasting Dish
INGREDIENTS:
- 1 kg Ground Pork
- 2 pcs Carrots
- 2 pcs Onions
- 1 pc Garlic
- 1 pc Large Bell Pepper
- 2 pcs Jumbo Hotdog
- 1/2 cup Raisins
- 1/4 cup Pickle Relish
- 1 cup Grated Cheese
- 3 pcs Hard Boiled Eggs
- 6 to 7pcs Beaten Eggs
- 150g Tomato Sauce
- 1 tbsp Tomato Paste
- Salt
- Soy Sauce
- Ground Black Pepper
- Garlic Powder
(Note: I did not put an exact measurement for the last four ingredients because it always depends on our taste or preference.)
PREPARATION:
Wash the ground Pork using a strainer and then drain.
Wash and peel the carrot and then slice it into small cubes.
Wash the hotdog thoroughly and then cut into small cubes.
Wash the large bell pepper. Cut it in half, then cut 12 thin long pcs and cut the rest into smaller cubes.
Peel and wash onion and then cut them into small pieces.
Crush and peel the garlic and then cut it into small pieces.
Grate the cheese.
Then, set them all aside with the rest of the ingredients.
(While preparing the ingredients I also boiled some eggs at the same time)
COOKING TIME:
Heat a small amount of canola oil in a pan. Then sauté the garlic, onion, and bell pepper until aromatic.
Add the ground pork and sauté until the water evaporates.
Add the tomato sauce and tomato paste. Stir to combine.
Season with soy sauce, a pinch of salt, ground black pepper, and a little garlic powder to taste.
Mix them well and continue cooking.
Then add the carrots, hotdog, and pickle relish. Toss and stir to combine well.
Then add the raisins and continue stirring and cooking for about 3 minutes. Then, turn off the heat and let it cool down.
While waiting for it to fully cool down, prepare the molder or llanera.
Put baking paper or banana leaf in the molder. Brush some oil or butter. Put some decorations like a hard-boiled egg cut lengthwise. Put half of the egg, pineapple sliced or tidbits, 1 bigger slice of hotdog, and bell pepper. Set them aside.
When the mixed ground pork has fully cooled down, add 7 pieces of beaten eggs and 1 cup of grated cheese. Mix them well together. Then pour the mixture into each of the decorated molders.
It filled six pieces of molders. Then, cover them with foil paper.
Steam them for 1 hour. Let them cool down again after steaming and refrigerate them.
After refrigerating them for an hour or more, you can serve them chilled or warmed. I like it warm, so I heat them through an air fryer. And it's truly yummy.
My sister and my pamangkins *(nephew and niece) really loved them, so I cooked another batch the next day for them to take home. My family loves it a lot, too and I'm pretty sure they'll ask me to cook hardinera again.
