My Savory Chicken Hamonada

As a food lover and passionate about cooking, I can always heartily share my home-cooked dishes here. I'm just so happy that my family always loves, appreciates, and praises the food I serve them. They are not tempted to go out and eat some luscious foods in restaurants anymore. One of my family's all-time favorite foods that I cooked is my "hamonada" dish, both pork and chicken.

My daughter @tegoshei requested I cook chicken hamonada last New Year's Eve. It was a good choice because chicken is healthier than pork, so I made it then.

Here's my version of cooking it.

My Savory Chicken Hamonada




INGREDIENTS:




  • Whole Dressed Chicken
  • Pineapple Juice (Heart Smart)
  • Sprite
  • Tomato Sauce
  • Tomato Paste
  • Brown Sugar
  • Ground Black Pepper
  • Garlic Powder
  • Paprika
  • Soy Sauce
  • Salt
  • Onion
  • Garlic
  • Ginger
  • Tomato
  • Lemon Grass
  • Spring Onion
  • Bay Leaf
  • Kalamansi
  • Knorr Chicken Cube
  • Water


PREPARATION:




Wash and clean the chicken thoroughly.
Prepare some sliced onions, garlic and tomatoes. Fold and make a knot for spring onions and lemon grass. Then stuff all these spices inside the chicken.
Set aside.
In a bigger container, mix pineapple juice, Sprite, soy sauce, ground black pepper, garlic powder, brown sugar, and a pinch of salt. After that, add up some sliced onions, garlic, ginger, and bay leaf.
Soak and marinate the chicken overnight.

COOKING TIME:





Prepare the cooker and transfer the marinated chicken to the cooker. Let the breast part of the chicken set at the bottom of the cooker. Set the cooker in a low to medium heat.

When it starts to simmer or boil a little, start bathing the chicken. Do it constantly while cooking.
You can also cover and continue cooking for a little while and flip the chicken, too. But you can only allow the back part to be at the bottom of the cooker for a short time because it can easily get burned.





As the simmering continues, prepare another sauce in a bowl.
Mix tomato sauce, tomato paste, a little pineapple juice, kalamansi juice, a little soy sauce, paprika, and garlic powder.




Then add this mixture to the chicken when the first sauce lessened and is nearly to the bottom. You can still add a small amount of Sprite if needed. I also added some sliced pineapples.

Do the bathing again evenly until the sauce thickens.




And there we go...😋 Our savory chicken hamonada is ready to serve.

The result was truly savory with those mixtures of spices and seasoning. There’s a great balance of flavor. The chicken meat was so tender and juicy and the flavor was really absorbed by the meat. You can eat it with unlimited rice...heheh
However, we didn't do it though.
