I always value every blessing I received from anyone, may it be small or big but it is always the thought that counts.
Our neighbor gave us some moringa leaves, malabar spinach, green chili and a cute bitter gourd. These are all from their own garden.
I just finished cooking our viand which was tinolang manok or chicken stew when I received it yesterday so I just kept them and set them aside for today's meal.
I still have some squash and carrots so I decided to cook veggie fritters again or vegetable ukoy and I'd like to mix it with the green leafy veggies from our neighbor.
And for the green chili I want to make a spicy sauce for the veggie fritters because my family loves spicy sauce except me. ✌🙂
So here, I shredded the carrots and squash and mixed them with some onion, green onion and the moringa and malabar spinach that I got from our neighbor yesterday. I made it sure to cook more than enough for us so that I can also share some to our neighbors -- the one who gave us the veggies and the other one who gave us Max (the golden retriever dog).
I made and cooked the spicy sauce first. It’s a mixture of soy sauce, lemon, white vinegar, ketchup, ground black pepper, a little brown sugar, and slurry. I sautéed some onions and garlic and then poured the mixture over them, adding a lot of sliced green chili and thinly sliced spring onion.
So, after the sauce, I cooked the veggie fritters. I did not write down the details of the recipe here because I already posted it in my previous blog, though it doesn't have the exact same ingredients, the process of cooking it was the same. For those who have not seen or read it yet, you can check it in my previous blog if you like. 😊
I'm really glad that I was able to cook a lot of veggie fritters today and was able to share some with our neighbors too. It's a great feeling to share something that we have and the same feeling when we receive something from others.
Again, we all had happy tummies including our two neighbors and their family. The same went for our two cute fur babies, especially Max because he loves to eat vegetables. But of course, I only fed him the veggies that are good for him and I always cook them without any flavoring or seasoning. I only boiled his veggies and mixed them with rice and sometimes chicken. Max’s food is a mix of table food and dog food while Arashi’s is pure dog food only.
In addition, we are so happy that Max gained another 1 kilogram on his last visit to the clinic for his vaccination last Saturday, February 22.
By the way, my husband and my daughter @tegoshei really love the green chili sauce and of course the veggie fritters..🤫🥰

I should also find neighbors who have garden and who are generous enough to share their vegetables. Heheh... I love this vegetable dish or called vegetable fritters. If you don't have these vegetables, you can use whatever is available; of course, the more vegetables, the merrier and healthier😃.

It was so kind of your neighbor to share their garden produce with you, and you shared the yummy cooked food with them in return. I miss that sense of community. We don't have that here, where I live. We hardly knew our neighbors, though I do chat with them once in a while.
Yes it is always a great feeling to share our blessing and it is also overwhelming to receive blessing from others too.

That is what's awesome about people especially in the province, although they do not have much they are actually very generous people. They share whatever they have grown from their backyards. Our community is much the same. Every now and then we share leafy greens and fruit of our avocados, cacao, and mangoes. We are indeed blessed to have neighbors who have big hearts. Your recipe looks so nutritious. I love the vegetable fritters the most here. I frequently enjoy it with vinegar. Thanks for sharing this.

I am proud I came from the province, that's the thing in our community, it's a culture helping each other, sharing crops and vegetables, you don't have to buy it. I love green and leafy vegetables they are nutritious and helps to boost our immune system.
So true. I really love staying in the province too. I've experienced living in the province a couple of years ago. And I had so much fun memories there.
That is why the more I appreciate this kind of gesture from the neighbors even if we are in the city now.
But well we are always generous to them in whatever blessings we have too like food, some seedlings that I personally grow out from the veggie seeds that I cooked. My daughter @tegoshei sometimes offered a help for our neighbor's kid too especially in school needs. She was our house help years ago too, that's why we have this strong relationship. 🥰
