It has been a while since I have written a lengthy post. So I'm taking use of my free time today to create a post about how I made ayam penyet. I didn't particularly refer to a recipe but I'd make my own version of ayam penyet.
To prepare ayam penyet, I need the following ingredients:
- 3 chicken thighs
- 4 cm* live turmeric
- 2 cm* ginger
- Lemongrass (three finely chopped stems)*
- Some onions
- Galangal 2 cm
For the sauce
- A handful of red chili
- Red onion
- Belacan (1 inch) (shrimp paste)
- 2 tomatoes
- 1 large onion
Turmeric from our backyard
Tumeric, which I use in my ayam penyet recipe, was grown right here in our backyard. Initially, it was there for quite some time. When I dug it up, I found a whole bucket's of tumeric.
Of course, I didn't use the whole bucket of tumeric for the ayam penyet recipe. I was planning to distribute the tumeric among neighbours and family.
From my reading on the internet, tumeric can boost heart health, prevent Alzheimer's and cancer, and lower blood pressure. It has anti-inflammatory and antioxidant properties that are second to none. Depressive and arthritic symptoms may benefit from it as well.
Procedure
Have a thing for tender, juicy chicken? That's what I think, too. In addition to making juicy chicken, boiling chicken thighs is a cost-effective way to cook.
Around 15 minutes, the chicken thigh is ready for the next step.
While waiting for the chicken thigh to get boiled, I prepraed the ingredient for marinating process. The ingredient are turmeric, ginger, onoin, lemongrass, and galangal.
Cut all the ingredient, ready for food processor.
Grind the onion, ginger, lemongrass, galangal and turmeric in a food processor.
Mix all of the ingredients together and marinate the chicken for about 30 minute
After marinating the chicken thigh for 30 minutes, cook it in hot boiling cooking oil till golden brown.
While waiting for the chicken thigh fried crispy, I prepared the ingredient for the chilli sauce. The ingredients are, tomatoes, onion, belacan (shrimp paste), and some chillies to your heart content.
Heat enough oil in a wok (saute onion, tomato, and red chiles for 4 minutes. Move to a food processor and add lime juice, shrimp paste, 1/2 teaspoon salt, sugar, and lemon basil.
Pound everything into a paste. The chilli sauce are ready.
Our ayam penyet is ready. Serve it with some cucumber slice.
