Lunch at JUICED: Food For The Soul

So my Aunt Carolina, mama's sister messaged me and invited me for lunch in a restaurant. She randomly calls any one of us to eat out with her. My Aunt has no children and his husband passed away a few years ago. She retired from working in the US as a midwife. She permanently came home and lives here. She is alone at her house but she is used to it already. Why she ended up returning to the Philippines because she got sick, and she stayed three months in a hospital in the US unconscious. Miraculously she woke up and survived. She was not supposed to come home because the US is her home and her husband was buried there. She rarely comes home in the Philippines. When I was young she wanted to adopt me but my father didn't like that. I was her favorite back then and I am my dad's favorite. I know that because I experienced it. No offense to my siblings haha...

Anyways, we are heading to Juiced Restaurant (formerly Jucha Restaurant), our favorite plant-based restaurant in town. Their meals are low in carbohydrates, salad, and fish. Their drinks are freshly juiced vegetables and fruits. The owner is a friend of mine who has also survived cancer. She opted not to have conventional treatment in Singapore. Because of what happened to her health, she researched naturopathic and natural doctors and made her own food and she claimed she was healed because of the food she consumed. That was her inspiration for starting this plant-based restaurant business. Aunt Carol can still drive even after she got sick at the age of 70.

In front of the restaurant are filled with plants. You can dine outside if you want.

The restaurant is clean and lively. The room is naturally unscented. Hearts are pasted on the wall as Valentine's Day is coming.

It took us a few minutes to order the food since Aunt Carol needed to read the ingredients and details of the meal. She ordered Fish Skewers- grilled fish called "malasugi" basted with parsley pesto served with multigrain rice and a side salad. My daughter and I chose "bibimbap", a mixture of quinoa-couscous shredded vegetables, tuna/mushroom bulgogi, and kimchi served with bibimbap sauce. We also added tuna salad-tuna relish, sweet corn, and croutons served in romaine lettuce. Our drinks are colorful. They are freshly squeezed fruit and vegetable juices. The red juice is bloody melon - beets and watermelon, the yellow juice is warm- apple, lemon, ginger, turmeric, and a dash of cayenne. The orange is an apple carrot. So fresh and so good.

This is their menu. The food nourishes your body. They are natural and very healthy. The ingredients are meticulously chosen from spices to condiments. Untitled design.png

Their water is alkaline. It is mixed with cucumber slices and lemon. Various health claims about alkaline water exist, such as its potential to prevent chronic health conditions.

They display mixed nuts, honey, cocoa, peanuts, mushroom chicharron banana chips, and many more.

We were so delighted with the food we ate. We felt light but energized. We were fully satiated. Believe me, we had a sound sleep at night.

I say food for the soul because it nourishes my body internally, affects my mood and well-being, and then comes out naturally. I'll treat other people nicely and warmly. Some reminders in this frame.
