I have never seen a food truck besides a kebab joint that wouldn't count. We have stands on the sides of the road, but they don't travel around and generate a following. Most are not great either and you have to be hungry and not fussy to stop. Hygiene is my biggest issue with no toilets and where do they wash their hands.
Oh you would hate street food in SE Asia then. Many of them don't even have access to water and sometimes you can see someone nearby washing all the dishes in these giant plastic buckets.
