This purple eggplant can be made into various types of breakfast as well as snacks. Fried using flour alone is delicious, let alone processed in the form of other foods and snacks. Cooking every day makes me think not to make the same menu every day. You must be bored with the same menu every day. Purple eggplant is also one of the vegetables that my parents-in-law really like. With the advanced age of my parents-in-law, maybe other foods that contain a lot of fat, maybe there is a fear of eating them, especially when my parents get sick a lot, they just don't feel well. For eggplants maybe because there are not too many factors to cause not feeling well.
Today I want to make purple eggplant with chili paste. Because my parents-in-law are also less interested in other dishes, only my partner doesn't like this purple eggplant. Purple eggplant is also not very good for men if you eat it frequently. I also don't make this dish very often. Because it so happened that today my parents-in-law are very interested in this type of vegetables, so I made purple eggplant with chili paste.
Ingredients to Make:
- 2 purple eggplants.
- 3 red onions.
- 1 clove of garlic.
- 4 red chilies.
- 10 cayenne pepper.
- 1 tomato.
- 1/4 shrimp paste.
- 200 mill (Oil for frying the eggplant and sautéing the spices).
- Salt 1/2 teaspoon.
- Sugar 1 teaspoon.
Here's How to Make It
The first step
Cut the eggplant as you wish, I cut the shape of the mereng.
Second step
Heat the oil, fry the purple eggplant until brown. Remove and set aside.
Third step
Add the spices to the blender puree.
Fourth Step
Heat the oil from the eggplant frying earlier, add the crushed spices. Stir evenly. Wait until the seasoning is cooked.
Step Five
Add salt and sugar. Stir until smooth.
Sixth Step
When the chili paste is cooked, add the eggplant that was fried earlier.
Seventh Step
Stir until smooth, taste the taste when it's right to turn off the heat.
Step Eighth
Eggplant with chili paste is ready to be served.
Purple eggplant with chili paste with a spicy, sweet and delicious taste. Makes the tongue want to taste the food immediately. I suggest not to get too soft in the purple eggplant frying process. If the texture of the eggplant is soft, the taste of fat from the eggplant will disappear, which can cause food that is less tasty.
As a type of vegetable, purple eggplant is very widely consumed by the public, because it can be processed with various types of food, especially menus that are suitable for rice, especially if served when it is still hot, it will add to the delicacy of the purple eggplant with chili paste, because shrimp paste which is made from shrimp, is a favorite ingredient in people's cooking in my country.
