Semur Jengkol, Tofu & Eggs (traditional food from the Betawi, Jakarta)

Good afternoon everyone, today I made a traditional Betawi menu from Jakarta - Indonesia. Maybe some friends here already know about this food or have even tasted it when they came to Indonesia.

Food with a sweet taste is usually served as a side dish for nasi uduk complete with other complementary dishes such as fried vermicelli, chili sauce and also mendoan tempeh or other fried foods.

"Semur" Today I made stew containing tofu, eggs, beef, chicken and what is very special in Betawi is jengkol stew. Jengkol is a food that has a strong smell so many people don't like it. However, if we cook it properly the smell can be minimized and it is more comfortable to eat. Jengkol itself, apart from being stewed, can be cooked into various menus such as sambalado, curry, fried or sauteed. To reduce the smell of jengkol, I added ground coffee during the process of boiling the jengkol, this method is quite effective in minimizing the smell of jengkol.

___ ingredients : ___

170 grams jengkol
10 pcs chocolate tofu / dry tofu
6 chicken eggs
2 tbsp sweet soy sauce
1 tsp salt
½ tsp flavoring
½ brown sugar

___ Fine herbs & spices: ___

1 thumb of galangal
2 bay leaves
1 small stick of cinnamon
3 cloves
½ star anise

Ground spices :
9 red onions
5 cloves of garlic
1 red chili
1 thumb of ginger
1 segment of turmeric
1 packet of Semur spices (cumin, coriander, pepper, cardamom, fennel and mace)

___ How ​​to make: ___

• Boil the washed jengkol with 1 tablespoon of ground coffee until soft and the skin peels off.

• Rinse the boiled jengkol again with clean water then remove the jengkol skin and divide it into 2. crush the jengkol but don't crush it too tightly because it could break.

• You can grind the spices using a blender or manually.

• saute ground spices and herbs until fragrant. Add seasoning salt, seasoning and brown sugar. (Don't add too much seasoning because when the sauce reduces it could become too salty.

• Then add the crushed jengkol, stir-fry until fragrant then add water and sweet soy sauce.

• After boiling, add the tofu, cook the eggs again until the sauce reduces slightly and changes color.

• Jengkol, tofu and egg semur is ready to be served.

Jengkol contains a lot of purine which is not good if consumed excessively by gout sufferers. However, jengkol also has several health benefits, one of which is that it can help facilitate bowel movements.
