I recently had a craving for soft tacos, but as I am not an expert tortilla maker, I decided to just use my already proven rotis as the taco delivery platform.
🪅 Just Sharing The Spread 👨🍳 Not A Recipe Post 🕉️
If you don't already know, my family and I are vegan, so of course these tacos are meatless, and that's kind of the reason I am not making this a recipe post. I wanted to attempt a vegan ground taco meat-ish replacement kind of thing, and making soft tacos with rotis instead of tortillas would be an additional experiment of sorts. With a couple experimental things going on, I knew this would either be a hit or a miss, and besides, it takes several times to perfect a new dish, so I'll share this with you all when/if it is ready, keep scrolling and reading to find out....
This whole thing started because we had some nacho chips from Phnom Penh, and after the chips were consumed there was a bowl of leftover homemade salsa to use. My mind began to wander, and I began thinking I could use rotis as tortillas, leaving only the ground beef problem to solve. I looked at about 10 or so recipes online, most of them involving any combo of cauliflower, nuts, mushrooms, and lentils, and eventually decided to make my own with a mix of cauliflower and walnuts I brought over from the USA nearly a year ago.
🌯 The Finished Product 🌮
The ground taco meat substitute ending up being the minced walnut-cauliflower mix, seasoned with cumin, onions, garlic, paprika, and some other things I am probably forgetting. I cooked it in the wok on super low heat for around 40 minutes, when it eventually began to resemble taco meat and the walnut oil began leave the walnuts. My wife and youngest daughter were out of town for a few days, so this dinner was just for Srey-Yuu and I.
Well, it was a hit, and the rotis stayed strong, holding together long enough for us to quickly toss a roti taco down our faceholes just after construction was completed. Our mock meat turned out really well, and even though it was nothing like ground beef, it worked well, and I dare say I like this creation more than real beef tacos in my pre-vegan days. I think this ground beef-ish mix might even work well in larb, a Thai-Khmer-Laotian salad that my wife does very well. I will be sharing this recipe in a properly formatted post in the near future, so stay tuned for that.

In unrelated news, my cat, ChairWoman Meow, is still cute as can be. The rainy season is slowly returning, so now she spends more time indoors cuddling and less time outdoors claiming souls. She now likes to be fed seaweed and potato chips at 3am and 5am, but if her hunt was successful, she won't wake me up at 3am. Either way, no matter how much geckos, crickets, and mice she eats, she always wants seaweed and chips at 5am, perhaps just to entertain our vegan lifestyle. Either way, it's cool to have a cat that hangs around even though she has to hunt for her protein.

If all people are vegan, no animals are slaughtered. Such a good food. We are what we eat. I really believe it coz when I had a gallstone surgery, the main cause of the other patient’s diseases is what they eat. You eat meat, there’s protein but a lot of fats that can cause gallstone and excessive cholesterol and fatty liver. It can also give a heart disease.
Your cat is one of the best hunter of meat. Did you see him eating a rat? I can’t remember of my cat eating rat because when she catches, she just brought it in front of me and play with it. But when she catched birds, she plays with it before eating.
I live best on a vegan diet, but I judge nobody else for what they eat. I wish I could eat the local food here in Cambodia at weddings and parties, but every single dish in this country must have meat, so it's really tough. I think possibly a bigger problem than meat, especially here in SE Asia, is that most people are lactose intolerant and shouldn't eat cheese or drink milk. Possibly in your country it is not as bad because you have some Spanish DNA, but here in Cambodia 99% of people are lactose intolerant. Sweeet yogurt drinks, pizza, all kinds of western dairy foods are now common here, and it's causing a lot of health issues.
In non-vegan news, my cat is a supreme killer. I only offer her some seaweed, corn, potato chips here and there, but she hunts for 90% of her food. I feel blessed to have a domestic kitty during the day, but at night she jumps out the window hole and claims various tiny souls. haha.
Perfect taco. Perhaps we can start a Spanish name for Srey-yuu for easy naming a restaurant 🤪

I am on my abstain days again since it is lent season. It was a struggle the first few weeks trying to stay away from meat. Now, towards the end I'm actually reading this post and drooling. The picture of the walnut oil pressing out of that mixture, and imagining the texture of the bite. Hmmm... Feels like I am enjoying meatless more 🤪
I call Srey-Yuu many nicknames, but never this one yet. Now Taco Juliana will be added to the list, haha.
I recommend the walnut cauliflower mince meat substitute. It would be good in many dishes, perhaps even Sloppy Joe sandwiches. Have you ever had a Sloppy Joe? It was a staple of my childhood, always fun to see if you can eat it before it falls apart.
Presented with amazingly glorious food that looks so good. These foods, especially vegetables and tomatoes, always increase our nutritional value. Feed your daughter with such care. May your duty as a father always follow me. May God always bless you and you and your daughter with healthy days.

It's a bit like Mexican tacos, at least I flavored it that way. The rotis work well as tortillas, but most of all the taco mix I made from cauliflower and walnuts was very delicious. I would like to make them again some time.
