Our new generation today cannot be compared to the old days because they rarely use the old processes and recipes, but the good memories stay forever, and that makes it a little extra special. I am proud to share with you all our local delicacy here in Cebu Province, named "Saging Niluyang" This is a type of banana known as the cardava banana in English and kardaba in our own language. This is usually grown in fields or even in our backyard. We usually eat this after cooking, but it can be eaten raw as well with different traditional Filipino meriendas.
Saging niluyang is mashed cardava banana, usually using a wooden pestle (lusong) and mortar. The classic way of making this will give you the best feeling, going all the way back to childhood. It's just a simple recipe that you can't find anywhere else. First, we let the banana boil and let it soften for about 30 minutes before proceeding. Then pound the cooked banana inside the wooden pestle with sugar and grated coconut. If it's already smooth, blended, and sticky, that's when you should stop pounding. It will be served with grated coconut on top, brushed with margarine, and covered with steamed banana leaves. One of the favorite meriendas for us Filipinos.
This is the well-known type of banana that we usually cook and that is grown here in the Philippines. Among other bananas, this cardava is well known for trading and most especially for its production. I can say that this is the most important food crop since it is one of the sources of food. Exporting the crop has also been a huge help as a source of income. The leaves are also used for wrapping and are one source of material for decorations. Secure food for the family since it grows any time of the year, especially in an area that is prone to food scarcity. As far as I've known, this is the best source of energy. By just eating two, you will gain more energy and be able to enjoy the rest of the day. And for people who love to party at night, and have the feeling of hangovers in the morning, this will help the body in terms of lacking vitamins and reduce all the weakness and hangovers. Above all, this type of banana is a substitute for rice and corn. There's literally so much to be thankful for.
