It seems like "Chinese" food is different everywhere one goes. Where I grew up, the best Asian food was made by Mexicans. Where I live now we have Chinese immigrants who make amazing food, and even though the decor of every restaurant is the same, the food is different in every shop.

We call those noodles "ramen" here, and they serve them in stand alone restaurants. None of the Chinese restaurants carry them.
