Today I cooked Lagman. It’s a Central Asian cousin. The only thing is that spaghetti that Uyghur people use are supposed to be handmade.
It can be made with lamb or beef. My kids are not super crazy about lamb, so I use beef.
In oil I put some beef and fry it until it’s brown. Then I add one onion and garlic that cut into small pieces, and after 5-10 minutes I add carrots that are also cut into small cubes.
I cooked it for another 15 minutes, then added 5 potatoes that I cut into cubes as well. Cover potatoes with boiled water, cook for 10 minutes.
Then I break spaghetti and add them to my potatoes, add more boiled water to cover everything. Cook until spaghetti is done. You don’t have to break spaghetti, I do it for my kids, so it’s easier for them to eat.

I serve it usually with some chives or any other green herbs like dill, or cilantro, we lime them all:-)
