The Agave Cocuy is a plant native to the semi-arid lands of Venezuela, with which the famous alcoholic beverage called Cocuy is prepared and distilled.
This drink has a similar flavor to Tequila and Mexican Mezcal, since they are extracted from the penca of the same family of Agave plants.
In the region of Lara and Falcón in the central west of Venezuela, are the areas of greatest production and consumption of Cocuy, and the artisan producers of the town of Pecaya, where I took these photos, have managed to register a denomination of origin that certifies the artisan and traditional processing to obtain a dry alcoholic beverage of the highest quality.
Despite this, the cocuy does not enjoy such good popularity or acceptance in a large part of the Venezuelan population, largely because outside of those states a good culture of consumption of Cocuy has not been developed, and this is related to some poor quality industrial liquors and adulterated artisanal versions that, since they are not 100% Agave, destroy all the potential of this drink, creating liquors that have little to do with the authentic cocuy de penca.
Fortunately, in recent years the veil of ignorance that covered this alcohol of ancestral origin has been reversing. Due to the participation and awards of several Cocuy brands in international festivals, such as the Agave Fest, where the Venezuelan Cocuy obtained important awards.
Personally, Cocuy is one of my favorite national drinks, along with aged rum it is in my place of honor, which is why I think it should be more representative, I love its smoky flavor and I usually drink it pure and dry.

Agave Cocuy
