Well, today I will share a very easy snack recipe for you to make at home, this rolled omelette is very interesting with the spots on the outside of the rolled omelette. Curious about the recipe? Well, to make this recipe, what you have to prepare is wheat flour with medium protein, then brown sugar, grated coconut, 1 egg or more according to your wishes, food coloring, instant coconut milk, salt and finally pandan leaves. After you have prepared the ingredients, now let's start the first stage, which is preparing the rolled omelet dough.
The first stage, after you have prepared all the ingredients, now prepare a place and pour 125 grams of flour or the equivalent of 9 tablespoons, then half a spoon of salt, add enough water, then pour 1 pack of instant coconut milk or 300 ml of coconut milk into the place. Then stir until well blended.
The second stage, after you have stirred until evenly distributed, now add 1 egg to the mixture and stir until smooth. I also put vanilla powder into the dough, why do I use vanilla? Because to reduce the smell of eggs.
The third stage, after the dough has been mixed well, now prepare another place and sieve the dough so that there is no flour that is still hard and the dough remains smooth.
The fourth stage, after you have sifted the dough so that there is no hard flour, now prepare 2 places and divide the dough into 2, then put different food coloring to taste each. I only use pink coloring for 1 dough and 1 more dough I use the base color of the dough. Then stir the dough until the color of the dough changes to the color you want.
The fifth stage, after you have finished the dough, let it rest for a few minutes. While the dough is resting, now we will prepare the coconut filling first. Cut the brown sugar into small pieces like the photo above.
The sixth stage, after you have cut the brown sugar into small pieces, now prepare a pan and put all the brown sugar that you have cut into pieces, then put enough water, granulated sugar to taste, half a teaspoon of salt and finally a piece of pandan leaf. Then cook the brown sugar until it dissolves and all the spices are well mixed. Make sure you use medium heat for cooking.
The seventh stage, after you have cooked the brown sugar until dissolved using medium heat. Now put the grated coconut that you prepared earlier, then stir until the brown sugar water shrinks and the grated coconut is well mixed with brown sugar water. Stir continuously until the brown sugar water dries up.
The eighth stage, after you have prepared the coconut filling, now we will return to the dough that was previously silent for a while. Now prepare the pan and put a little dough to form like dots. We'll be making dots for the omelet, so don't put too much batter in the pan. Don't forget to use low heat.
The ninth stage, after the spots are cooked, now pour enough dough into the dough, widen it by shaking the pan until the dough is evenly distributed throughout the pan, you can see the photo above for more details. Remember, don't put too much dough, because what we need is only thin. Repeat steps eight and nine until the dough is done.
Well, if you have prepared all the omelet shells until the dough is used up and grated coconut for stuffing. Now we will start filling the coconut and rolling the omelet.
The tenth stage, now prepare a plate and place the omelet shell that you have prepared like the photo above, then put enough grated coconut into the middle of the omelet shell. Put the grated coconut as you wish.
The last stage, after you have put the grated coconut in the middle of the omelet shell, now fold and roll the omelet, you can see the photo above how to fold the omelet shell. Do the tenth step and this last stage until all the omelet shells and grated coconut are done. After that, the omelette rolls can be eaten.
Finally, the polka dot omelet is done and can be served to your family or friends. It tastes very good and the grated coconut is very tasty when bitten.
