Friends !!!, when you go to the supermarket and enter the grain aisle, maybe, you walk past it and look at them with indifference, I imagine, you are not used to eating them, you don't like them, they don't call you the attention, among other reasons; However; grains are a very nutritious food and can bring many benefits to your health.


Today, I am going to talk about yellow lentil, it is a grain that can provide your diet with a large amount of fiber, vitamins B1, B2, B5 and B6, and minerals such as iron, phosphorus, potassium, magnesium, selenium, zinc and calcium, in addition this grain lacks almost entirely fat, hence it is an ideal food for people with a low calorie diet; not satisfied with this, yellow duckweed can give you excellent benefits for the body, among which stand out:

-It is excellent for people suffering from anemia or what is known as low hemoglobin, since these lentils have a large amount of iron, ideal for the production of red blood cells.

-It is ideal to keep cholesterol levels low, since being a food rich in fiber, it absorbs cholesterol and prevents it from reaching the blood flow.

-They are excellent for protecting the nervous system, thanks to their content of B vitamins. This grain is excellent for maintaining healthy bones, due to its calcium content.

-It provides energy, and due to its zinc content, it strengthens the body's defenses.

Friends!!! Come all the benefits that the yellow pea offers you for your health, from there, I recommend that you include it in your diet and give this food a chance. So that you enjoy the nutritional value of this grain I propose a recipe that I always enjoy, so that you do not think that they are only boiled with salt, these grains are versatile and depend on your creativity, you can make soups, creams, stews, croquettes, include them in salads and others, this time I will make a yellow lentil omelette and I will tell you that it is really delicious, here are the ingredients:

-100 gr of lentils

-3 eggs.

-1 small onion

-1 chives

-Salt and pepper.

Preparation:

First you must take the 100 gr of yellow peas and put them to soak for a day, so that they leave the shell and are easier to cook and are soft, after soaking they cook for approximately 40 minutes, at the end of cooking they are allowed to rest and Then you process it in the blender until a paste is formed.


Having the yellow peas paste reserved, then cut the onion, chives and other vegetables you want, when having the chopped vegetables proceed to fry them.


When the sofrito is ready, add the yellow lentil paste and incorpórate with the fried vegetables, add salt and pepper to taste and reserve is prepared.


Simultaneously you beat the three eggs, and you add the paste of fried peas and vegetables, it will be a softer paste as you see in the photo.


Grease a frying pan and put on a medium heat, add the lentil paste and form your tortilla, it should cook about 5 minutes per side until golden.


Then proceed to flip your omelette, I help myself with a plate.


When you turn it over, place the missing side for cooking in the pan, until it is ready; turn off and enjoy this delicious and nutritious dish
