Hello dear friends. Lately I've been craving cheese crepes. Since we had cheese at home today, I decided to make some right away. I've been making cheese crepes with the same recipe for years. This recipe was given to us by a nurse who used to come to our house to give massages. I was probably around 10-11 years old back then. I use semolina in the recipe. But I usually just estimate the amount. Because I always buy a 355 gram pack of white cheese. I usually use two packs, so it's about 700 grams. The recipe calls for 500 grams of cheese. The proportions are as follows: 1 egg, 2 tablespoons of semolina, 1 tablespoon of flour, 500 grams of cheese, 2 tablespoons of sugar and a little salt.
Egg, sugar and semolina are mixed and left to sit for a while, then cheese is added. I also add vanilla and according to the recipe, I need to add flour, one tablespoon but I put a little more.
If I use homemade cheese, I need to add more flour, about three or four tablespoons, otherwise they break apart when frying. This has happened to me a few times.
After preparing the dough I roll it out and fry it.
I also made sandwiches. I used yeast-free bread because yeast-free bread has started to be sold near my house. I try to reduce yeast intake as much as possible, especially in bread. I made my sandwiches with butter, chicken rolls and cheese. I've been buying chicken rolls frequently lately. They have a nice content and don't contain unnecessary additives. Lately I especially love mozzarella cheese sandwiches. I can't eat hard cheese made at home, it's not to my taste. So now I use either mozzarella or homemade cheese. Then my daughter and I opened her new toy package. These toys look so real, they are truly amazing. I bought a few sets. They are all waterproof and washable and quite sturdy. Playing with toy food seems like it's going to be a lot of fun.
Then I did some tidying up in the kitchen and started my daily cleaning routine. As usual I dusted and wiped the floors, cleaned the sink. I made the bed, put on the sheets and added the organizer where I keep my summer clothes. Then I started the routine cleaning around the house. I took out the summer clothes and replaced them with winter clothes. Winter has returned outside now. But the weather seems like it will improve soon. Then I moved to the living room, cleaned the couch. I usually clean it with a sticky roller, but I didn't have one on hand, so I just wiped it with a damp microfiber cloth.
Then I went outside, took a short walk with my mom and on our way back, my mom made mushroom soup. We had some mushrooms recently received from the neighbor and it turned out to be a fantastic soup, really appetizing. I love mushrooms, they're a burst of flavor. I couldn't resist, had a bowl and then continued with my tasks.
And then I started preparing dinner. I wanted to make cabbage rolls; I hadn't made them in a while. I put the rice to cook and prepared the cabbage. I usually steam it in the microwave. I put it in a bag, cook for 8 minutes then flip it and cook for another 4 minutes. If the leaves are still hard, I reheat them in the package. I don't have large packages now, so this time I had to use zip-lock bags. But this package didn't do a great job of cooking the cabbage evenly. It turned out a bit uneven inside, so the leaves were quite wrinkled and thick. I couldn't get many leaves, and there was leftover filling.
I sautéed the onion with carrots, then added tomato sauce, a bit of salt, bay leaves, garlic, peppercorns and a little water once everything was cooked.
I added them to the cabbage rolls at the end because if I add them too early, the cabbage will remain tough in the tomato sauce and won't cook properly. So I add them about 10 minutes before removing from the heat.
I added rice to the filling, transferred it to a bowl to cool down, then added salt, pepper and shaped the rolls. I always make them large. Since the cabbage leaves are big, the rolls turn out large too.
I placed the rolls in a pot, added salt so the cabbage would also be salty, poured boiling water and let them cook.
The cabbage on top was still raw, the ones on the surface. So I flipped them and they cooked for a while longer. The result was fantastic.
